Epic Salmon

Epic Salmon
1 to 1 1/2 lbs fresh salmon

1/4 tsp course sea salt
1/2 tsp course black pepper
1/2 tsp paprika
1/2 tsp basil
1 Tblsp lemon juice
1/4 cup white wine
2 Tblsp Olive Oil
Heat olive oil in skillet until almost smoking. Sprinkle salt and pepper on fillets and sear on both sides on medium heat for 2 to 3 minutes until darkened.
Warm olive oil, wine, lemon juice and remaining dry spices. Remove salmon from skillet and place on a plate and pour sauce over all. Enjoy!!

So as it turns out, salmon comes with some skin/scales thing on the bottom of it. It completely freaked me out. Jason had to prep the fish for me. This is the first time I've ever cooked fish and I don't know how I will ever get used to that gross bottom part. Eeeek.
I also made a a salad that went with it and used the dressing from earlier today. It was pretty tasty. But it did not compare with the Epic Salmon. I adore the sauce. Here's the original recipe.
